Here’s a quick & easy recipe to incorporate organ mean into your diet. If you are cooking for a family, keep the secret, they will never know. If you haven’t read my post on why organ meat is important, read it here.
Prep time: 10 minutes
Cook time: 20 minutes
1lb Grass-fed ground beef
1lb Grass-fed beef organ blend*
1/2 cup chopped onion
1/3 cup coconut flour
1 raw egg
Sea Salt, garlic, and optional seasoning to taste
(pictured using fresh basil, dry Italian hers, and garlic lemon sea salt, all to taste)
Mix all together, by hand is best, form into balls and place on a cookie sheet. Bake at 350 for 20 minutes. Cook time will vary depending on the size of the meatballs, check often, cook until golden.
*I use a blend of organ meat (heart, kidney, and tongue) from Novoy Ranchers. You can create your own or try using liver. If you use liver, you’ll want to reduce your ratio of ground beef to liver (75% ground beef, 25% beef liver). If you don’t like the strong flavor of liver, make it more palatable by soaking the raw liver in milk (use raw milk or almond milk) and lemon juice for a few hours (or overnight) before using.
